Commercial kitchen grease trap

Today you can find commercial grease traps in most kitchens and restaurants. A restaurant grease trap, also know as a grease interceptor, is one of the most important tools you will find in any commercial kitchen. Well just why is a grease trap so important? This trap is specifically designed for waste water that includes oils, fats and grease. This combination in high quantities will block up sewer drains and cause back-flow. The is especially common in the winter as water temperature drop slightly and the fats solidify more quickly.

To function properly, traps must be cleaned out on a regulars basis. Fat oils and Grease are represented by the acronym FOG. Brown fats, coming from poultry and other meats have the most odor. Cleaning out your trap on a regular basis, will keep it from smelling bad. It is also a good idea to use a grease trap to avoid grease, fats and oils form entering into your under ground septic tank.

Another benefit of these traps is that they can actually cut down on pollution. Large underground units can be pumped out and their contents can be recycled. (Smaller units will just need to be emptied into the trash.) Having a grease interceptor in place can reduce the amount of pollution that gets back into the lakes and rivers. If the water in your cities is all reused, it can make the job for the guys at the water treatment plant a little easier.

Grease Interceptors can come in all different types of shapes and sizes. Sometime a grease trap can process on 4 to 8 gallons per minutes and sometime they can process 50 to 100 gallons per minute. Smaller units sell for around $150 to $200. Lager units can sell for more then $1000s. The largest traps today are probably found in shopping malls or food manufacturing facilities.
