The legend

This is the holy house of Los Sfânt and their no less holy Covrigi. Perhaps when trying them, your spirit will fly to the medieval city of Sibiu, at the foot of the Carpathians, where on the corner of a street near La Piața Mare, Ionesco Sfânt opened a bakery in 1888, whose Covrigi became one of the most sacred foods of Transylvania.

It was Nicoleta Sfant who accustomed her daughters Petronela, Ionela and Cosmina and little Vasile to rewarding their learning with the famous covrigi, recalling the origin that Benedictine monks from Burgundy and the Rhineland had given her in the 7th century, who handed them over as award to children who did their homework. They explained that the "brezel" represented the arms of a child performing his prayers. Devoted as Nicoleta was, she taught her husband how to make the rolls, who modified the recipe by dipping them in boiling water before baking, giving them a peculiar flavor that differentiated covrigi from German pretzels.

 

Here you can find the famous Covrigi that Los Sfânt kneaded for three generations in all its forms: sweet and savory, with and without a bow; as well as Romanian-inspired breads and from various parts of the world

 

The Ionesco Sfant star

simit is traditionally served with tea, fruit jam, or cheese. An alternative may be to serve with a glass of wine according to the words that, in Romania, Buzau, 19th century, pretzels were introduced by Greek sellers who wanted to stimulate wine consumption. They thought that in order to attract their consumers and make them enjoy the taste of each sip of wine, they would offer them hot and fragrant pretzels.A curiosity of the Covrig: it is boiled sparingly before baking.

 

BROUGHT FROM TRANSYLVANIA

True, Ionesco gets the glory and applause for its acclaimed  Covrigi, but Nicoleta also deserves a little chapter in the history of Transylvanian gastronomy.

 

 

 

Nicoleta was not a traditional woman and that is very noticeable in her elaborations in which a free and carefree style is noted in which aromas and flavors of different cultures are recognized.

 

MALASAGNA

If something becomes fashionable, be it baos or dim sum, you will find it in Malasaña. Before it was a neighborhood where grandparents greeted each other on the street and exchanged gossip from the neighbors, but since the arrival of hipsters and modern people the neighborhood has become the coolest area in Madrid, bikes have invaded the streets and bars and designer restaurants share streets with mythical places that survived the Madrid scene, traditional bookstores and brave record stores. Artists and intellectuals come together in this "trendy zone" that finds its equivalents in  Camden Town  in  London , the  East Village  of  New York , or  Kreuzberg  in  Berlin .
