  1. Backed by history and experience

 

After the San Francisco Earthquake, the Wagner family moved to the Napa Valley area in 1906 and began planting. They were already growing their own grapes by 1915, and these were mainly used in bulk wines. In 1941, they bought 73 acres of prime vineyard in Rutherford, but it wasn’t until 20 years later that they began to seriously plant grapevines. Before the land was used for the famous Caymus Napa Cabernet Sauvignon and Pinot Noir, it was primarily a fruit ranch. And in 1972, Caymus Vineyards came to be, with its name derived from the original Mexican land grant that was awarded in the 19th century where they planted their vines.

 

  1. Sets the standard for Cabernet Sauvignon

 

Three years after the official launch of Caymus Vineyards, it became among the first wineries to create California Cabernet Sauvignon made from a special selection of the best parcels in Rutherford. ‘Caymus Special Selection’ was initially aged up to four years in a combination of old and new French oak barrels. Nowadays, new oak is used in up to 90 percent of the selection and aging is reduced to around 18 months.

The Caymus Special Selection made the Caymus Napa Cabernet Sauvignon a high-quality wine with an elegant and soft, yet rich and ripe quality. It is best served at 60 degrees Fahrenheit (15.5 degrees Celsius. The cool and almost cellar temperature will give it more lift and freshness.

 

  1. Versatility

 

Caymus Vineyards’ red wine goes perfectly with all kinds of classic meat dishes with pork, veal, lamb, beef, game, duck, and roast chicken. Enjoy it with ribs, barbecue, hamburgers, grilled meats, stews, and braised dishes. It also pairs well with Asian dishes, particularly hearty fish like salmon and tuna, as well as pasta and mushrooms.

 

  1. Taste

 

Caymus Napa Cabernet Sauvignon offers layered and lush aromas and flavors, including ripe dark berries, cocoa, and cassis. The standard Cabernet is a varietal wine in some years, and in other years, it contains tiny amounts of Cabernet Franc and Merlot varieties. The alcohol content is 14.14 percent, with flavor notes of vanilla, plum, and oak.
