½ cup honey

Recipe:

  • Mix the coconut cream or milk, honey, and vanilla extract with a whisker accessory that comes with a KitchenAid stand mixer until well blended and smooth in texture.
  • Freeze the mixture for at least 1 hour in freezer-safe storage containers.

Espresso Cheesecake

Ingredients:

For the crust: 2½ cups cookie crumbs, 2 tbsp sugar, and 4 tbsp melted butter

For the Cake: ¼ cup heavy cream, 2½ tbsp instant espresso powder, 3 pounds cream cheese, 1 cup sour cream, 1¾ cups sugar, 5 eggs, 1 tbsp pure vanilla extract, and a pinch of salt.


Recipe:

  • Preheat the oven to 325°F
  • Spray the bottom of a 10-inch springform pan lightly


Making the Crust: In a large mixing bowl, combine the cookie crumbs, sugar, and melted butter. Press the mixture evenly into the sprayed pan base. Bake for 10 to 15 minutes and let it cool.


Making the Cheesecake:

  • In a Commercial Bowl Lift Stand Mixer, combine the cream cheese, sour and heavy cream with the espresso powder and sugar. 
  • Add the eggs (one at a time), pulsing and scraping well each time. 
  • Add in the vanilla and salt.
  • Pour the batter over the cooled crust in the pan. 
  • Reduce the oven temperature to 300°F and bake for 1 to 1½ hours, or until the cheesecake is slightly jiggly in the center.
  • After baking, set aside the cheesecake for 1 hour to cool and place it in the refrigerator for 2 hours. 
  • The cheesecake is ready to serve. (You can add toppings of your liking)
