Although Polydextrose is virtually non-sweet, it can be utilised to restore the bulk and mouthfeel that are sometimes lost when sugars are eliminated. Moreover, Polydextrose can enhance the sweetness of beverages that include high-potency sweeteners by lowering the bitter and acidic overtones and enhancing the sweetness of the sugar. As Litesse® Two imparts a mild yellow colour in solution, it is suited for beverages with a high colour content, such juices, cordials, and smoothies.


Due to its little flavour and texture impact, Litesse® Ultra is especially well suited for clear, low-flavoured products like flavor- and near-water-based drinks. Carbonated and non-carbonated drinks, concentrated and ready-to-drink drinks, hot and cold drinks, and more can all use Litesse®. Examples include beverages made from fruit or vegetable juice, smoothies, meal replacements, beverages made with milk, dairy, and soy, sport and energy drinks, tea and coffee, creamers, and water.


In order to replace all or a portion of the sugars and some of the fats in foods while preserving a pleasing texture and mouthfeel, polydextrose is employed as a low-calorie bulking agent.


As a humectant, texturizer, thickening, stabiliser, and cryoprotectant, Polydextrose has further uses. Litesse® is a white to cream-colored powder that melts at 130 °C, has a pH (10% solution) of 2.5-3.5, is clear, bright, and nonsticky, displays no crystallisation, and only provides 1 kcal per gramme. Litesse® may be utilised in frozen dairy desserts, baked products, confections, frostings, salad dressings, gelatins, puddings, fillings, hard and soft candies, and chewing gum, according to the FDA. A higher amount of sugar and fat substitution is offered by Litesse® II, which was created especially for light foods. Polydextrose is now classified as a "carbohydrate" by the FDA.
