Whether you’re new to grilling at home or fancy yourself a seasoned pitmaster, now’s a good time to start pondering your outdoor grill possibilities for the months ahead. Perhaps you swear by your easy-to-operate gas grill but want to try your hand at charcoal or pellet grilling this year, or you’ve downsized to a smaller living space and no longer have the space for your five-burner propane BBQ. Before you buy a new BBQ tool set (find our favorite options in each category here), let’s run through your options.

First, the type of grill you should purchase is determined by a number of factors, including (but not limited to) the amount of space you have to store it, the flavors you want to impart on the foods you’re cooking, the ideal amount of time and attention you’d like to spend cooking, and the amount of experience you have behind the barbecue. There are two main types of grills — gas and charcoal — however electric and wood pellet grills are increasingly popular. Here are a few basics you should know about each.

Gas grill

Gas-fueled grills usually use propane or butane (liquefied petroleum gas) or natural gas as their fuel source, and the gas flame or cooking food directly or grilling heating elements and then radiating the required heat to cook the food. Gas grills vary in size, from small single-steak grills to large industrial-scale restaurant grills. They can cook enough meat to feed a hundred or more people. It is possible to switch between certain gas grills using liquefied petroleum gas and natural gas fuel, although this requires physical changes to key components including burners and regulating valves.

Brazier grill

The brazier grill is the simplest and cheapest charcoal grill. It is made of wire and metal plates and consists of a cooking grid placed on a charcoal pan. Usually, the grill is supported by legs attached to the charcoal pot. The brazier grill has no lid or ventilation system. Adjust the heat by moving the cooking grid above the charcoal pot up or down. Even after George Stephen invented the kettle grill in the early 1950s, the brazier grill remained the dominant type of charcoal grill for many years. In summer, most discount department stores offer brazier grills.

Infrared grill

The infrared grill heats the working ceramic tiles by igniting gas fuel, causing the infrared radiation it emits to be cooked by the food. When the heat from the movement of charged particles in the atom is converted into electromagnetic radiation in the infrared thermal frequency range, thermal radiation is generated. Compared with charcoal grills, infrared grills make it easier for users to adjust the cooking temperature, and can usually reach a higher temperature than standard gas grills, making it popular for grilling food quickly.

Square charcoal grill

The square charcoal grill is a hybrid of a brazier and a kettle grill. It has a shallow pot like a brazier and is usually a simple way to adjust the heat (if any). However, it has a lid that resembles a kettle grill and basic adjustable vents. As expected, the price of the square charcoal grill is between the brazier and the bottle cage, the most basic model is the same price as the most expensive brazier, and the most expensive model competes with the basic bottle cage. These grills are available at discount stores and have replaced most larger braziers. The square charcoal grill has almost only four legs and two wheels at the back, so you can use the handle of the lid to tilt the grill back to roll the grill cooking set. A more expensive example is the installation of baskets and racks on grills.
