Apple Spice Baby Backs With Cider-Rum Barbecue Sauce

I've made these ribs with an apple-themed theme. You smoke them using apple wood chips, and then offer them with homemade the cider-rum BBQ sauce. Once you've got the hang of it you'll be able to infinitely alter the flavor of the ribs by altering the seasoning.

CIDER-BRINED PORK CHOPS

The combination of apples and pork is a match that is a match made in heaven. This apple cider brine imparts pork a sweet flavor and helps to prevent the meat from drying off when cooking.

PERUVIAN-STYLE SPIT-ROASTED CHICKEN WITH GREEN SAUCE

For authenticity one must familiarize yourself with two main ingredients commonly used in Peruvian cooking: aji Amarillo paste and the huacatay (black mint) paste. Both are readily available in Latin American markets and on the internet. Take them off when you can. Traditional dishes are thick-cut potato or yucca fries, as well as green salad. Small Peruvian purple potatoes, which are cooked alongside that of the meat (dress the potatoes with olive oil, salt and pepper prior to roasting) can also be a great companion to the smokey chicken.
